Instructions

  1. Brown the butter: In a small saucepan over medium heat, melt the unsalted butter, stirring constantly until it turns golden brown and smells nutty, about 5 minutes. Remove from heat and let cool slightly.
  2. Preheat the oven to 350°F (175°C). Grease a 9×5 inch loaf pan with butter or line with parchment paper.
  3. Toast the walnuts in a dry skillet over medium heat until fragrant and lightly browned, about 5 minutes. Stir frequently to avoid burning. Set aside to cool.
  4. In a large mixing bowl, combine mashed bananas, browned butter, sugar, and vanilla extract. Stir gently until smooth.
  5. Add eggs one at a time, mixing well after each addition until the batter is thick and glossy.
  6. In a separate bowl, whisk together flour, baking soda, and salt. Gradually fold the dry ingredients into the wet ingredients until just combined. Avoid overmixing.
