  • 1 teaspoon pure vanilla extract
  • 1 can (12 oz / 354 ml) evaporated milk
  • 1 can (14 oz / 396 g) sweetened condensed milk
  • ½ cup (120 ml) whole milk (or dairy-free milk like oat milk)
  • 1 ½ cups (360 ml) heavy whipping cream, cold
  • 3 tablespoons powdered sugar
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13 inch baking dish and lightly dust with flour.
  2. Separate the eggs into whites and yolks, ensuring no yolk mixes with whites.
  3. Beat egg whites with an electric mixer until soft peaks form. Gradually add ½ cup sugar and beat until stiff, glossy peaks form.
  4. In another bowl, beat yolks with remaining ½ cup sugar and vanilla extract until pale and thick.
  5. Sift together flour, baking powder, and salt. Gently fold dry ingredients alternately with milk into yolk mixture.
  6. Carefully fold whipped egg whites into batter to keep it airy.
  7. Pour batter into prepared pan and bake for 25–30 minutes until a toothpick comes out clean and cake springs back lightly.
  8. Cool cake in pan on wire rack for 10 minutes. Poke holes all over the top with a fork or skewer.
  9. Whisk evaporated milk, sweetened condensed milk, and whole milk together in a large bowl.
  10. Slowly pour milk mixture evenly over warm cake. Refrigerate for at least 30 minutes to soak.
  11. Chill mixing bowl and beaters for 10 minutes. Beat cold heavy cream with powdered sugar, cinnamon, and vanilla until soft peaks form.
  12. Spread cinnamon whipped cream evenly over soaked cake. Dust with extra cinnamon if desired. Serve chilled.
