A quick and easy creamy chicken dish with a luscious sun-dried tomato sauce, perfect for weeknight dinners or special occasions.

  • 4 boneless, skinless chicken breasts (about 6 oz / 170 g each), pounded to even thickness
  • Salt and pepper, to taste
  • 2 tablespoons olive oil (extra-virgin preferred)
  • 2 tablespoons unsalted butter
  • 3 cloves garlic, minced
  • 1/3 cup chopped sun-dried tomatoes packed in oil
  • 1 cup heavy cream (240 ml)
  • 1/2 cup chicken broth (120 ml), preferably low sodium
  • 1/3 cup grated Parmesan cheese
  • A handful fresh basil, chopped
  • A pinch red pepper flakes (optional)
  • 1 tablespoon freshly squeezed lemon juice
  • Optional: a splash of white wine

Instructions

  1. Place chicken breasts between two sheets of parchment or plastic wrap and gently pound to about 1/2 inch (1.3 cm) thickness.
  2. Season both sides of the chicken breasts generously with salt and freshly ground black pepper.
  3. Heat a large skillet over medium-high heat and add olive oil and butter. Wait until butter melts and starts to bubble but does not brown.
  4. Add chicken breasts in a single layer and cook undisturbed for about 5 minutes until golden brown on the bottom. Flip and cook the other side for another 4-5 minutes until cooked through (internal temperature 165°F / 74°C). Remove chicken and set aside loosely covered with foil.
  5. Reduce heat to medium. Add minced garlic to the same pan and sauté for about 30 seconds until fragrant, being careful not to burn.
  6. Stir in chopped sun-dried tomatoes and cook for 1 minute to release flavor.
  7. Pour in chicken broth and white wine (if using) to deglaze the pan, scraping up browned bits. Let simmer for 2 minutes to reduce slightly.
  8. Lower heat to medium-low and stir in heavy cream and grated Parmesan cheese. Simmer gently, stirring frequently, until sauce thickens, about 4-5 minutes. Add more broth if sauce thickens too much.
  9. Stir in fresh basil, red pepper flakes (if using), and lemon juice. Adjust salt and pepper to taste.
  10. Return chicken breasts to the sauce, spoon sauce over the top, and warm together for 2 minutes before serving.

Notes

Pound chicken breasts to even thickness for uniform cooking. Avoid overcrowding the pan to get a good sear. Use medium heat for the sauce to prevent cream from separating. Deglaze pan well to incorporate browned bits for flavor. Add fresh herbs at the end to preserve brightness. Adjust sauce thickness by adding broth or cream as needed.
