This recipe delivers irresistibly crispy chicken thighs with a sweet and spicy honey sriracha glaze, perfect for quick and flavorful weeknight dinners.

Ingredients

Scale
  • 4 bone-in, skin-on chicken thighs (about 1.5 lbs / 700 g)
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt, or to taste
  • ½ teaspoon freshly ground black pepper
  • 3 tablespoons honey
  • 2 tablespoons sriracha sauce
  • 1 teaspoon rice vinegar
  • 1 teaspoon soy sauce (or tamari for gluten-free)
  • 1 clove minced garlic

Instructions

  1. Pat the chicken thighs dry thoroughly with paper towels to ensure crispiness (about 3 minutes).
  2. In a medium bowl, toss the chicken with olive oil, garlic powder, smoked paprika, salt, and black pepper until evenly coated (about 5 minutes).
  3. Preheat the air fryer to 400°F (200°C) for 5 minutes.
  4. Place the chicken thighs skin-side down in the air fryer basket without overlapping. Cook in batches if necessary (about 2 minutes to arrange).
  5. Air fry at 400°F (200°C) for 10 minutes. Flip the thighs skin-side up and cook for another 10-12 minutes until the skin is golden and crispy. Use a meat thermometer to ensure internal temperature reaches 165°F (74°C).
  6. While the chicken cooks, whisk together honey, sriracha, rice vinegar, soy sauce, and minced garlic in a small bowl to make the glaze.
  7. Brush the glaze generously over the hot chicken thighs. Return to the air fryer at 390°F (200°C) for 2-3 minutes to caramelize the glaze, watching carefully to avoid burning.
  8. Let the chicken rest for 5 minutes before serving to allow juices to redistribute and glaze to set.

Notes

Dry the chicken skin thoroughly for best crispiness. Do not overcrowd the air fryer basket to allow proper air circulation. Flip chicken thighs carefully to avoid tearing the skin. Adjust sriracha to taste for desired heat level. Use tamari instead of soy sauce for gluten-free option. Rest chicken before serving to keep it juicy. Reheat leftovers in air fryer at 375°F for 5 minutes to maintain crispiness.
