A simple and show-stopping overnight brioche French toast casserole that soaks custard overnight for a tender, custardy texture with a caramelized crust. Perfect for a cozy, no-stress Mother’s Day breakfast.

Ingredients

Scale
  • 1 loaf brioche bread (about 12 ounces / 340 grams), sliced into 1-inch cubes
  • 6 large eggs, room temperature
  • 2 cups whole milk (480 ml)
  • 1 cup heavy cream (240 ml)
  • 1/2 cup granulated sugar (100 grams)
  • 2 teaspoons pure vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 2 tablespoons unsalted butter, melted (for greasing and brushing)
  • Maple syrup (for serving)

Instructions

  1. Cut 1 loaf of brioche into 1-inch cubes and transfer evenly into a greased 9×13 inch baking dish.
  2. In a large mixing bowl, whisk together 6 large eggs, 2 cups whole milk, 1 cup heavy cream, 1/2 cup granulated sugar, 2 teaspoons vanilla extract, 1 teaspoon ground cinnamon, and 1/4 teaspoon salt until well combined and slightly frothy.
  3. Slowly pour the custard mixture over the brioche cubes, gently pressing down to help the bread absorb the liquid without stirring too much.
  4. Cover the baking dish tightly with aluminum foil or plastic wrap and refrigerate for at least 8 hours or overnight.
  5. Preheat oven to 350°F (175°C). Remove casserole from fridge and uncover. Brush the top lightly with 2 tablespoons melted unsalted butter.
  6. Bake uncovered for 45-50 minutes until the top is puffed, golden brown, and a knife inserted in the center comes out clean.
  7. Let the casserole rest for 10 minutes after baking. Serve warm with maple syrup drizzled over the top.

Notes

Use slightly stale brioche for best texture to avoid mushiness. If the top browns too fast, cover loosely with foil halfway through baking. Let casserole rest after baking to firm up for easier slicing. Optional toppings include fresh berries, sliced almonds, or powdered sugar. For dairy-free or vegan versions, substitute milk and cream with plant-based alternatives and eggs with flaxseed mixture.
