A simple and comforting French toast casserole soaked overnight for a custardy texture and baked to golden perfection, perfect for cozy weekend breakfasts or brunches.

Ingredients

Scale
  • 8 cups day-old bread cubes (preferably brioche or challah)
  • 6 large eggs, room temperature
  • 2 cups whole milk (or any milk of choice; almond or oat milk works well)
  • 1/2 cup heavy cream (optional, can substitute with more milk)
  • 3/4 cup granulated sugar
  • 1 tablespoon pure vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/3 cup packed light brown sugar
  • 2 tablespoons unsalted butter, melted

Instructions

  1. Cube the day-old bread into roughly 1-inch cubes (about 8 cups).
  2. In a large mixing bowl, whisk together eggs, milk, heavy cream, granulated sugar, vanilla extract, and ground cinnamon until smooth.
  3. Place bread cubes in a greased 9×13 inch baking dish. Pour custard mixture evenly over the bread, gently pressing down to soak all pieces.
  4. Cover the dish tightly with aluminum foil or plastic wrap and refrigerate for at least 8 hours or overnight.
  5. The next morning, mix brown sugar with melted butter and sprinkle evenly over the soaked bread.
  6. Preheat oven to 350°F (175°C). Bake uncovered for 40-45 minutes until the top is golden brown and custard is set. Cover with foil if browning too fast.
  7. Let the casserole rest for about 5 minutes before slicing and serving.

Notes

Use day-old bread for best soaking without sogginess. Room temperature eggs and milk help custard mix evenly. Cover casserole if top browns too fast. Can substitute dairy with plant-based alternatives for dairy-free version.
