  • 2 pounds fresh chicken wings (whole wings or wingettes and drumettes separated)
  • 1 cup cherry Coke (regular or diet, regular preferred for caramelized sweetness)
  • 3 tablespoons soy sauce (Kikkoman recommended)
  • 2 tablespoons brown sugar
  • 1 tablespoon rice vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon freshly grated ginger (optional but recommended)
  • 1 teaspoon sesame oil
  • 1 tablespoon toasted sesame seeds
  • 3 scallion stalks, thinly sliced
  • Freshly ground black pepper, to taste
  • Salt, to season wings before cooking

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with foil and place a wire rack on top if available.
  2. Pat chicken wings dry with paper towels. Season lightly with salt and freshly ground black pepper.
  3. Arrange wings in a single layer on the wire rack or directly on the foil-lined baking sheet, ensuring they are not touching.
  4. Bake wings for 40-45 minutes, flipping once halfway through, until golden brown and crispy.
  5. While wings bake, combine cherry Coke, soy sauce, brown sugar, rice vinegar, minced garlic, grated ginger, and sesame oil in a medium saucepan over medium heat.
  6. Simmer the glaze, stirring occasionally, until thick and syrupy, about 15 minutes. Add a splash of water if too thick.
  7. Once wings are done, toss them in the warm glaze until well coated.
  8. Sprinkle toasted sesame seeds and sliced scallions generously over the glazed wings.
  9. Serve immediately while glaze is sticky and wings are hot.

Notes

Pat wings dry thoroughly for crispiness. Use a wire rack to allow air circulation. Watch glaze closely to prevent burning. Toast sesame seeds gently. For extra crispiness, broil wings 1-2 minutes after glazing. Silicone spatula recommended for tossing wings in glaze. For gluten-free, substitute soy sauce with tamari. For lower sugar, use diet cherry soda but glaze will caramelize less.
