Fresh Spring Grazing Board with Brie and Honey

A quick and easy springtime grazing board featuring creamy Brie, drizzled honey, crisp seasonal vegetables, fresh herbs, and crunchy crackers, perfect for casual gatherings or elegant entertaining.

Ingredients

  • 8 ounces Brie cheese (preferably triple-cream variety)
  • 2 tablespoons raw or local honey
  • 1 cup sugar snap peas, trimmed
  • 1 cup radishes, thinly sliced
  • 1 cup baby carrots, peeled
  • 1/2 cup English cucumber, sliced into rounds
  • A handful of fresh thyme leaves
  • A handful of fresh mint leaves
  • 1 box water crackers or any thin, crisp crackers
  • 1 small baguette, sliced and lightly toasted
  • Optional: A handful of toasted walnuts or Marcona almonds
  • Optional: 1/4 cup Castelvetrano or Kalamata olives

Instructions

  1. Rinse and trim sugar snap peas, slice radishes and cucumber into thin rounds, and peel baby carrots. Arrange them separately in small piles or clusters on your board.
  2. Using a sharp knife, slice the Brie into wedges or leave it whole with a small cut for easy serving. Place it centrally on the board.
  3. Lightly toast the baguette slices until golden but still soft inside.
  4. Fan out crackers and scatter toasted walnuts or Marcona almonds in small piles on the board.
  5. Spoon olives into ramekins and tuck fresh thyme and mint sprigs around the board.
  6. Just before serving, drizzle honey over the Brie and a few spots on the board.

Notes

Take Brie out of the fridge 20 minutes before serving for best texture. Soak radishes and cucumbers in ice water if wilted. Toast nuts and bread carefully to avoid burning. Assemble board within an hour of serving for freshness. Warm honey slightly if too thick before drizzling.
