These quick and easy pinwheel wraps combine creamy sun-dried tomato cream cheese, ripe avocado, fresh turkey slices, and greens for a fresh, satisfying lunch or snack.

Ingredients

  • Large flour tortillas or whole wheat wraps (8-inch)
  • Fresh turkey breast slices, about 8 oz (225 g)
  • Ripe avocado, sliced or mashed (1 medium)
  • Fresh spinach leaves or baby lettuce (1 cup packed)
  • Cream cheese, softened (4 oz / 115 g)
  • Sun-dried tomatoes packed in oil, finely chopped (1/4 cup / 40 g)
  • Fresh basil leaves, finely chopped (1 tbsp)
  • Garlic powder (1/4 tsp)
  • Salt and pepper, to taste
  • Lemon juice (a squeeze, optional)
  • Red pepper flakes (optional)

Instructions

  1. Make the sun-dried tomato cream cheese: In a mixing bowl, combine 4 oz softened cream cheese with 1/4 cup finely chopped sun-dried tomatoes. Add 1 tbsp chopped fresh basil, 1/4 tsp garlic powder, and a pinch of salt and pepper. Mix thoroughly until smooth and evenly combined. Taste and adjust seasoning if needed. Set aside.
  2. Prepare the avocado: Slice or mash 1 ripe avocado. If mashing, add a squeeze of lemon juice to prevent browning and brighten the flavor. Season lightly with salt.
  3. Lay out the wraps: Place one large tortilla flat on your clean surface. Spread a generous, even layer (about 2-3 tbsp) of the sun-dried tomato cream cheese over the entire surface, reaching close to the edges.
  4. Add turkey and greens: Layer 2-3 oz fresh turkey slices evenly over the cream cheese. Then, add a handful of fresh spinach or baby lettuce for crunch and color.
  5. Add the avocado: Spread the sliced or mashed avocado evenly over the turkey and greens.
  6. Roll tightly: Starting from one edge, roll the tortilla up snugly but without tearing. Wrap tightly in plastic wrap or parchment paper and refrigerate for 10-15 minutes to set. This helps with slicing clean pinwheels.
  7. Slice into pinwheels: Remove the wrap from the fridge and, using a sharp knife, slice into 1-inch thick rounds. Arrange on a platter and serve immediately or cover and chill until ready.

Notes

Soften cream cheese to room temperature for easy spreading. Chill wraps before slicing to prevent squishing. Warm tortillas slightly if they feel stiff to make rolling easier. Use ripe avocado to avoid sogginess. Wrap leftovers tightly and refrigerate up to 2 days. Best served chilled or at room temperature.
