Ingredients

  • Bone-in spiral-cut ham, 8-10 pounds (3.6-4.5 kg), fully cooked and smoked
  • Honey, ½ cup (120 ml)
  • Brown sugar, ¾ cup (150 grams), packed
  • Pineapple juice, ½ cup (120 ml), fresh or canned
  • Pineapple rings, 8-10 slices, canned or fresh
  • Dijon mustard, 2 tablespoons (30 ml)
  • Ground cloves, 1 teaspoon (2 grams)
  • Cinnamon, ½ teaspoon (1 gram), optional
  • Apple cider vinegar, 1 tablespoon (15 ml)
  • Black pepper, freshly ground, to taste

Instructions

  1. Preheat your oven to 325°F (163°C). Remove ham from fridge and let come to room temperature for about 30 minutes.
  2. Score the surface of the ham in a diamond pattern about ½ inch (1.3 cm) deep using a sharp knife.
  3. Place the ham on a rack in your roasting pan, fat side up. Tent loosely with foil.
  4. Roast the ham for about 1 hour 30 minutes, or roughly 15 minutes per pound. Use a meat thermometer to check for an internal temperature of 140°F (60°C).
  5. While the ham roasts, make the glaze: In a small saucepan, combine honey, brown sugar, pineapple juice, Dijon mustard, ground cloves, cinnamon, and apple cider vinegar. Simmer gently over medium-low heat, stirring frequently until sugar dissolves and glaze thickens slightly (8-10 minutes). Remove from heat and keep warm.
  6. During the last 30 minutes of roasting, remove foil, brush a generous layer of glaze over the ham, and arrange pineapple rings on top, securing with toothpicks if needed. Return ham to oven uncovered.
  7. Baste the ham every 10 minutes with remaining glaze until sticky, shiny, and golden brown. Watch carefully to avoid burning.
  8. Remove ham from oven and let rest for 15 minutes before slicing.
  9. Slice between spiral slices or along scored lines and serve warm.

Notes

Score the ham surface to help glaze penetrate and create caramelized edges. Apply glaze only in the last 30 minutes to prevent burning. Let ham rest after cooking to redistribute juices. Save some glaze for drizzling at the table. For a spicy twist, add cayenne or red pepper flakes to the glaze. This recipe works well with a slow cooker method but glaze caramelization will be less pronounced.
