Ingredients

Scale
  • 2 ½ cups (312g) all-purpose flour, sifted
  • 2 ½ tsp baking powder
  • ½ tsp baking soda
  • ½ tsp fine sea salt
  • 1 cup (226g) unsalted butter, softened (room temperature, not melted)
  • 1 ¾ cups (350g) granulated sugar
  • 4 large eggs, room temperature
  • 1 tbsp pure vanilla extract
  • ½ tsp almond extract (optional)
  • 1 cup (240ml) whole milk, room temperature (or dairy-free milk like oat milk)
  • 1 ½ cups (340g) unsalted butter, softened (for buttercream)
  • 5 cups (600g) powdered sugar, sifted
  • 2 tsp pure vanilla extract (for buttercream)
  • 24 tbsp heavy cream or milk (adjust for desired consistency)
  • Pinch of fine sea salt (for buttercream)
  • Gel food coloring in pastel shades (soft pink, lavender, mint green)
  • Edible gold leaf sheets
  • Fresh edible flowers or floral piping tips for buttercream flowers

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour two 8-inch cake pans or line with parchment paper.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.
  3. Using a mixer, beat 1 cup softened butter and 1 ¾ cups sugar on medium-high speed until light and fluffy, about 3-4 minutes.
  4. Add eggs one at a time, beating well after each addition. Mix in vanilla and almond extracts.
  5. With mixer on low, add dry ingredients in three parts alternating with milk in two parts, beginning and ending with dry ingredients. Mix just until combined.
  6. Divide batter evenly between prepared pans. Tap pans gently to release air bubbles.
  7. Bake for 28-32 minutes or until a toothpick inserted in the center comes out clean. Cake should spring back when touched.
  8. Cool cakes in pans for 10 minutes, then transfer to wire racks to cool completely before frosting.
  9. For buttercream, beat 1 ½ cups softened butter on medium speed until creamy (2-3 minutes). Gradually add powdered sugar, 1 cup at a time, mixing on low speed.
  10. Add vanilla extract, salt, and 2 tablespoons cream. Beat on high for 3-4 minutes until fluffy. Adjust consistency with more cream or powdered sugar as needed.
  11. Divide frosting into small bowls and tint each with pastel gel colors.
  12. Spread a thin crumb coat on one cake layer using an offset spatula, chill for 15 minutes, then apply a smooth final coat.
  13. Pipe pastel floral designs around edges and top using piping tips.
  14. Carefully place edible gold leaf accents with tweezers for an elegant shimmer.

Notes

Let butter soften naturally at room temperature for best frosting texture. Sift powdered sugar to avoid lumps. Chill crumb coat before final frosting for a smooth finish. Practice floral piping on parchment paper if new. Handle edible gold leaf with dry hands and tools to prevent tearing. Cake layers can be baked ahead and frozen unfrosted for up to 3 months.
