Ingredients

Scale
  • 4 cups (480 g) all-purpose flour
  • 2 ¼ teaspoons (one packet) active dry yeast
  • ½ cup (100 g) granulated sugar
  • 1 cup (240 ml) whole milk, warmed to about 110°F (43°C)
  • 4 tablespoons (56 g) unsalted butter, melted
  • 2 large eggs, room temperature
  • 1 teaspoon salt
  • Fresh orange zest from 2 medium oranges
  • 4 tablespoons (56 g) unsalted butter, softened (for filling)
  • ½ cup (110 g) brown sugar
  • 2 teaspoons ground cinnamon
  • 1 teaspoon orange zest (for filling)
  • 4 ounces (113 g) cream cheese, softened
  • 2 tablespoons (28 g) unsalted butter, softened (for glaze)
  • 1 cup (120 g) powdered sugar, sifted
  • 1 teaspoon pure vanilla extract
  • 1 to 2 tablespoons (1530 ml) milk

Instructions

  1. Activate the yeast by sprinkling it over warm milk (110°F / 43°C) with 1 tablespoon sugar. Let sit 5-10 minutes until foamy.
  2. In a large bowl or stand mixer, combine flour, remaining sugar, and salt. Add melted butter, eggs, orange zest, and yeast mixture. Mix on low speed until combined, then knead about 8 minutes until smooth and slightly tacky.
  3. Lightly oil a bowl, place dough inside, turn to coat, cover tightly, and refrigerate overnight (8-12 hours).
  4. Prepare filling by combining softened butter, brown sugar, cinnamon, and orange zest in a small bowl.
  5. Remove dough from fridge, let sit 20-30 minutes at room temperature. Roll out on floured surface into a 15×20 inch rectangle.
  6. Spread filling evenly over dough.
  7. Roll dough tightly from long edge into a log. Cut into 12 equal rolls (~1 ½ inches each). Place cut side up in greased 9×13 inch pan.
  8. Cover loosely and let rise at room temperature 1 to 1 ½ hours until puffy and nearly doubled.
  9. Preheat oven to 350°F (175°C). Bake rolls 25-30 minutes until golden brown. Tent with foil if tops brown too quickly.
  10. While baking, beat cream cheese, butter, powdered sugar, vanilla extract, and 1 tablespoon milk until smooth. Add more milk if needed for consistency.
  11. Drizzle glaze over warm rolls and serve immediately.

Notes

Use fresh orange zest for best flavor. If dough is sticky when rolling, dust lightly with flour but avoid overflouring. Use dental floss to cut rolls for clean edges. Soften cream cheese and butter well before making glaze to avoid lumps. For dairy-free, substitute milk and cream cheese with plant-based alternatives. Gluten-free flour blend can be used but texture may vary.
