A playful, frozen variation of the classic Aperol Spritz that’s perfect for summer, combining frozen strawberries, Aperol, prosecco, and citrus for a refreshing, slightly bitter, and sweet slushie.

  • 1 1/2 cups (225g) frozen strawberries, no need to thaw
  • 3 ounces (90ml) Aperol
  • 4 ounces (120ml) prosecco or sparkling wine
  • 1 tablespoon (15ml) fresh lemon juice
  • 1 tablespoon (15ml) simple syrup (optional)
  • 1 cup (120g) ice cubes
  • Fresh strawberries, sliced (optional, for garnish)
  • Mint leaves (for garnish)

Instructions

  1. Gather your ingredients: 1 1/2 cups frozen strawberries, 3 oz Aperol, 4 oz prosecco, 1 tbsp lemon juice, and simple syrup if using.
  2. Place frozen strawberries in the blender and add 1 cup of ice cubes.
  3. Pour in Aperol, lemon juice, and simple syrup (optional).
  4. Blend on high: pulse a few times to break up the ice, then blend continuously for about 30 seconds or until smooth but still icy. Stop and scrape down the sides if needed.
  5. Slowly pour in prosecco and gently stir with a long spoon to combine without losing fizz.
  6. Taste and adjust: add more simple syrup if too tart, or more prosecco/cold water if too thick.
  7. Pour into glasses immediately and garnish with fresh strawberry slices and mint leaves.

Notes

Pulse ice cubes first before blending fully to avoid blender strain. Use frozen strawberries straight from the freezer without thawing to keep the slushie icy. Add prosecco after blending to preserve bubbles. Chill glasses beforehand to keep the slushie from melting too quickly. For a mocktail, substitute Aperol and prosecco with non-alcoholic alternatives.
