  • 3 cloves garlic, minced

  • 1/4 cup low-sodium soy sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon rice vinegar (unseasoned)
  • 1 teaspoon sesame oil (toasted)
  • 1/2 teaspoon red pepper flakes (optional)
  • 1 tablespoon cornstarch mixed with 2 tablespoons cold water
  • Cooked white rice or brown rice (for serving)
  • Sliced green onions (for garnish, optional)
  • Toasted sesame seeds (for garnish, optional)

Instructions

  1. Make the Sauce: In a small bowl, whisk together soy sauce, brown sugar, rice vinegar, sesame oil, and red pepper flakes (if using). In another tiny bowl, mix cornstarch and cold water until smooth.
  2. Prep Your Veggies: Wash broccoli and cut into bite-sized florets. Mince garlic and grate ginger.
  3. Brown the Beef: Heat a large skillet or wok over high heat until smoking hot. Add vegetable oil and swirl to coat. Add ground beef and let it sit undisturbed for 2 minutes to sear. Break into crumbles and cook until no longer pink, about 3-4 minutes. Do not drain fat.
  4. Add Aromatics: Push beef to one side of the pan. Add garlic and ginger to the empty space and cook for 30 seconds until fragrant. Stir everything together.
  5. Cook the Broccoli: Add broccoli florets to the pan. Toss to combine with beef. Cook for 2-3 minutes, stirring occasionally, until broccoli is bright green and tender-crisp.
  6. Add the Sauce: Pour soy sauce mixture over beef and broccoli. Stir to coat. Let it bubble for 1 minute.
  7. Thicken It Up: Stir cornstarch slurry and pour into the pan. Stir constantly for 30 seconds to 1 minute until sauce thickens and becomes glossy.
  8. Taste and Adjust: Adjust seasoning with more soy sauce or red pepper flakes as desired.
  9. Serve Immediately: Spoon stir fry over hot rice. Garnish with green onions and sesame seeds if desired.

Notes

For best results, get your pan hot before adding ingredients. Prep all ingredients before starting to cook. Use a fattier ground beef (80/20 or 85/15) for juicier results. The cornstarch slurry should be stirred again just before adding to prevent clumping. Broccoli should be cooked just until tender-crisp, about 2-3 minutes.
