Instructions

  1. Preheat your oven to 375°F (190°C). Position the rack in the center of the oven.
  2. Prepare the peaches: Wash, peel, and slice the peaches into 1/2-inch thick wedges. You should have about 6 cups.
  3. Make the filling: In a large bowl, gently toss the sliced peaches with the sugar, cornstarch, lemon juice, vanilla, cinnamon, nutmeg, and salt. Let this sit for about 10 minutes while you make the biscuit dough.
  4. Start the biscuit dough: In a medium bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  5. Cut in the butter: Add the cold butter cubes to the flour mixture. Using a pastry cutter or two forks, cut the butter into the flour until the mixture looks like coarse meal with pea-sized butter pieces.
