  • 1 ½ cups (about 2 medium apples) peeled and diced apples (Honeycrisp, Fuji, or Granny Smith)
  • ¾ cup (94 g) all-purpose flour (for crumb topping)
  • ½ cup (100 g) packed brown sugar (for crumb topping)
  • 1 ½ teaspoons ground cinnamon (for crumb topping)
  • 4 tablespoons (57 g) unsalted butter, melted (for crumb topping)
  • Pinch of salt (for crumb topping)

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8-inch square baking pan with parchment paper, leaving overhang on two sides. Grease lightly.
  2. Make the crumb topping: In a medium bowl, whisk together ¾ cup flour, ½ cup packed brown sugar, 1 ½ teaspoons cinnamon, and a pinch of salt. Pour in 4 tablespoons melted butter and stir with a fork until clumps form. Set aside.
  3. Prepare the apples: Peel and core 2 medium apples, dice into ½-inch cubes (about 1 ½ cups). Toss with 1 tablespoon granulated sugar and ½ teaspoon cinnamon.
  4. Cream the butter and sugar: In a large bowl, beat 6 tablespoons softened butter with ½ cup granulated sugar until light and fluffy, about 2-3 minutes. Add 1 egg and 1 teaspoon vanilla; beat until combined.
  5. Mix dry ingredients: In a small bowl, whisk together 1 ½ cups flour, 1 ½ teaspoons baking powder, ¼ teaspoon salt, and 1 teaspoon cinnamon.
  6. Alternate adding dry ingredients and buttermilk: Add half the flour mixture to the butter mixture and stir until just combined. Add ½ cup buttermilk and stir. Add remaining flour mixture and stir until no streaks remain. Do not overmix.
  7. Fold in the apples: Gently fold the cinnamon-sugar-coated apple cubes into the batter until evenly distributed.
  8. Assemble the cake: Scrape batter into prepared pan and spread evenly. Sprinkle crumb topping evenly over the batter. Do not press down.
  9. Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs. If topping browns too quickly, tent with foil after 25 minutes.
  10. Cool in pan for 10 minutes, then lift out using parchment overhang and transfer to a cooling rack. Cool completely before slicing.

Notes

For best results, use room temperature ingredients. Do not overmix the batter. Let the cake cool completely before slicing to keep the crumb topping intact. For extra crunchy topping, toast the crumb mixture on a baking sheet for 5-7 minutes before sprinkling over batter.
