  • 1 package (16 oz) refrigerated pizza dough
  • 1/4 cup baking soda
  • 1 large egg, beaten
  • Coarse sea salt or pretzel salt
  • 4 tablespoons unsalted butter, melted
  • 8 oz sharp cheddar cheese, freshly shredded
  • 4 oz cream cheese, softened
  • 1/2 cup light beer
  • 1 tablespoon Dijon mustard
  • 1 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • Salt and black pepper to taste
  • 8 oz salami or pepperoni, sliced
  • 6 oz sharp cheddar cheese block, cubed
  • 6 oz gouda or provolone, sliced
  • 1 cup mixed olives (green and kalamata)
  • 1 cup cherry tomatoes, halved
  • 1 cup baby dill pickles or cornichons
  • 1 cup mixed nuts (honey roasted or salted)
  • 1/2 cup whole grain mustard or spicy brown mustard
  • Fresh herbs like rosemary or thyme for garnish (optional)

Instructions

  1. Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper.
  2. Bring a large pot of water to a boil. Add the baking soda carefully. Roll out pizza dough on a lightly floured surface into a 1/2-inch thick rectangle. Cut into 1-inch squares (about 40-50 pieces).
  3. Drop 8-10 dough squares into the boiling water at a time. Boil for 30 seconds, then remove with a slotted spoon and place on the prepared baking sheet, spacing about 1 inch apart.
  4. Brush each pretzel bite with the beaten egg wash. Sprinkle generously with coarse sea salt. Bake for 12-15 minutes until golden brown and puffed.
  5. While the pretzel bites bake, combine shredded cheddar, cream cheese, beer, Dijon mustard, garlic powder, and smoked paprika in a small saucepan. Heat over medium-low heat, stirring constantly, for 5-7 minutes until melted and smooth. Season with salt and pepper. Keep warm.
  6. Once the pretzel bites come out of the oven, brush them with melted butter.
  7. Assemble the board: Place small bowls for beer cheese dip, mustard, and olives. Fan out salami slices. Arrange cheese cubes and slices in clusters. Fill gaps with cherry tomatoes, pickles, and nuts. Pile warm pretzel bites in the center or next to the dips.
  8. Garnish with fresh herbs if using. Serve immediately while the pretzel bites and cheese dip are warm.

Notes

The pretzel bites are best eaten within an hour of baking. To keep them warm, place in a 200°F oven until serving. The cheese dip can be made a day ahead and reheated gently. For gluten-free, use gluten-free pizza dough. For a spicy version, add jalapeños and pepper jack cheese.
