This creamy, spicy buffalo chicken dip is the ultimate game day appetizer. Made with simple ingredients like cream cheese, chicken, hot sauce, and a blend of cheeses, it comes together in under 30 minutes and always disappears fast.

  • 16 oz cream cheese, softened to room temperature
  • 1 cup sour cream (full-fat preferred)
  • 1/2 cup ranch dressing (or blue cheese dressing)
  • 1/3 cup Frank’s RedHot Original hot sauce
  • 2 cups cooked chicken, shredded or diced
  • 2 cups shredded sharp cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup crumbled blue cheese (optional)
  • 1/4 cup sliced green onions
  • 1 tablespoon chopped fresh parsley (optional)
  • Extra hot sauce for drizzling (optional)

Instructions

  1. Preheat your oven to 375°F (190°C). Spray a 9×13 inch baking dish with non-stick spray.
  2. Soften the cream cheese (microwave in 10-second bursts if needed).
  3. In a large mixing bowl, combine softened cream cheese, sour cream, ranch dressing, and hot sauce. Beat with an electric mixer on medium speed until smooth, about 2 minutes.
  4. Fold in the shredded chicken until evenly coated.
  5. Add 1 1/2 cups of the shredded cheddar and 3/4 cup of the Monterey Jack cheese (reserve the rest for topping). Stir until fully incorporated. If using blue cheese, add it now.
  6. Spread the mixture evenly into the prepared baking dish.
  7. Top with the remaining shredded cheddar and Monterey Jack cheese.
  8. Bake for 20-25 minutes, until edges are bubbling and top is melted and golden. For a browner top, broil for the last 2 minutes.
  9. Let rest for 5 minutes before serving.
  10. Garnish with sliced green onions and a drizzle of extra hot sauce if desired. Serve warm with tortilla chips, celery sticks, or crusty bread.

Notes

For best results, use room temperature cream cheese and sour cream, and shred your own cheese. Let the dip rest for 5 minutes after baking to set. Can be assembled a day ahead and refrigerated; add 5-10 minutes to baking time if starting from cold.
