  • 1/3 cup (75g) unsalted butter, melted and slightly cooled
  • 3/4 cup (150g) granulated sugar
  • 1 large egg, at room temperature
  • 1 teaspoon vanilla extract
  • 1 1/2 cups (190g) all-purpose flour, spooned and leveled
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon (optional but recommended)
  • 1/2 cup (60g) walnuts, roughly chopped and toasted

Instructions

  1. Preheat your oven to 350°F (175°C). Position the rack in the center of the oven. Line a 9×5 inch loaf pan with parchment paper or grease it well with butter.
  2. In a large mixing bowl, mash the bananas with a fork until mostly smooth with a few small lumps.
  3. Add the melted butter and stir until combined.
  4. Mix in the granulated sugar until well incorporated.
  5. Add the egg and vanilla extract, stirring until smooth and well combined.
  6. Sprinkle the flour, baking soda, salt, and cinnamon over the wet mixture. Stir gently with a spatula or wooden spoon until just combined. Do not overmix; a few lumps are okay.
  7. Fold in the toasted walnuts gently with 3-4 strokes.
  8. Pour the batter into the prepared loaf pan and smooth the top.
  9. Bake for 55-65 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs. If the top browns too quickly, tent with foil for the last 15 minutes.
  10. Cool in the pan for 10 minutes, then remove from the pan and cool completely on a wire rack (about 1 hour) before slicing.

Notes

Use very ripe bananas with brown spots for best flavor and sweetness. Toast walnuts in a dry skillet over medium heat for 3-4 minutes until fragrant. Do not overmix the batter to avoid tough bread. For a gluten-free version, use a 1:1 gluten-free flour blend. For a vegan version, replace the egg with a flax egg and use melted coconut oil or vegan butter.
