  • 1 medium red onion, cut into wedges
  • 2 tablespoons olive oil

Instructions

  1. Preheat oven to 425°F (220°C). Line a half-sheet pan (13×18 inches) with parchment paper or aluminum foil.
  2. In a large bowl, toss broccoli florets, bell pepper pieces, and red onion wedges with olive oil, salt, and pepper until evenly coated. Spread vegetables in a single layer on one half of the prepared sheet pan, leaving the other half empty for the salmon.
  3. Roast vegetables for 10 minutes.
  4. Meanwhile, in a small bowl, whisk together honey, soy sauce, minced garlic, rice vinegar, sesame oil, cornstarch, and red pepper flakes (if using) until cornstarch is fully dissolved. Set aside about 2 tablespoons of the glaze for serving.
  5. Pat salmon fillets dry with paper towels. Place them skin-side down on the empty half of the sheet pan, spacing them slightly apart.
  6. Brush the remaining glaze generously over each salmon fillet.
  7. Return the sheet pan to the oven and roast for 12 to 15 minutes, until salmon is opaque and flakes easily with a fork (internal temperature of 145°F at the thickest part). For extra caramelization, switch to broil for the last 1 to 2 minutes, watching closely to prevent burning.
  8. Remove from oven and let rest for 2 to 3 minutes. Drizzle reserved glaze over the top before serving.
