  • ¼ cup nut-free sprinkles (e.g., Wilton’s nut-free rainbow sprinkles)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease your mini muffin tin lightly with non-stick spray or line with paper liners.
  2. In a medium bowl, sift together all-purpose flour, unsweetened cocoa powder, baking powder, and salt. Whisk to blend evenly and set aside.
  3. In a larger bowl, whisk granulated sugar and brown sugar with melted butter until smooth and glossy, about 2-3 minutes. The mixture should be warm but not hot.
  4. Add eggs one at a time, whisking well after each addition. Stir in vanilla extract until the batter thickens and becomes shiny.
  5. Gently fold the dry ingredients into the wet ingredients using a spatula, avoiding overmixing. A few streaks of flour are okay.
  6. Spoon the batter evenly into the prepared mini muffin cups, filling each about ¾ full. Sprinkle a pinch of nut-free rainbow sprinkles on top of each cup.
