Instructions

  1. Brew your coffee or espresso (2 minutes). Brew 1 cup of strong coffee or pull 2 shots of espresso. While it’s brewing, fill your tall glass with ice cubes. Set the coffee aside to cool slightly.
  2. Mix the pumpkin puree base (1 minute). In a small bowl, combine 2 tablespoons pumpkin puree, 1/2 cup milk, 1 tablespoon maple syrup, 1/2 teaspoon pumpkin pie spice, 1/4 teaspoon vanilla extract, and a pinch of salt. Whisk until smooth. The mixture should be thick but pourable.
  3. Combine the latte (30 seconds). Pour the pumpkin milk mixture over the ice in your glass. Then slowly pour the brewed coffee or espresso over the top. Stir gently with a spoon to combine.
  4. Make the cold foam (2 minutes). In a separate small bowl or jar, combine 1/4 cup cold heavy cream, 2 tablespoons milk, 1 tablespoon maple syrup, 1/4 teaspoon pumpkin pie spice, and 1/4 teaspoon vanilla extract. Use a milk frother or whisk vigorously for 30-60 seconds until the mixture doubles in volume and forms soft peaks.
  5. Assemble the latte (30 seconds). Spoon the cold foam gently over the top of the latte. Sprinkle with extra pumpkin pie spice or cinnamon for garnish. Serve immediately with a straw.
  6. Taste and adjust (optional). Take a sip. If you want it sweeter, add a little more maple syrup. If the pumpkin flavor isn’t strong enough, add another tablespoon of puree next time.

Notes

For the best cold foam, use heavy cream with at least 35% milk fat and keep it cold. Let the pumpkin puree mixture sit for 5 minutes before adding coffee to allow spices to bloom. Layer ingredients properly: pumpkin milk mixture first, then coffee over ice. Do not use more than 2 tablespoons of pumpkin puree to avoid graininess. The cold foam does not store well—make it fresh each time.
