This easy homemade pumpkin spice syrup captures the iconic Starbucks flavor in under 15 minutes. Made with simple pantry ingredients, it’s perfect for adding cozy autumn flavor to coffee, lattes, oatmeal, and more.

  • 1 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 3 tablespoons pumpkin puree (not pumpkin pie filling)
  • 1 1/2 teaspoons pumpkin pie spice
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract

Instructions

  1. In a medium saucepan, whisk together water, granulated sugar, and brown sugar. Place over medium heat and stir occasionally until sugars are completely dissolved, about 2-3 minutes.
  2. Whisk in pumpkin puree, pumpkin pie spice, ground cinnamon, and salt until fully incorporated and no lumps remain.
  3. Increase heat to medium-high and bring to a gentle simmer (small bubbles breaking the surface). Do not let it come to a rolling boil. Simmer for 3-4 minutes.
  4. Reduce heat to low and let simmer gently for 5 minutes to meld flavors.
  5. Remove from heat and stir in vanilla extract. Let cool in the pan for about 10 minutes.
  6. For a smooth syrup, pour through a fine-mesh strainer into a glass jar or bottle. Use a spoon to gently press solids through if desired, or let liquid drain naturally.
  7. Let syrup cool completely at room temperature. It will thicken slightly. Once cool, seal jar and refrigerate.

Notes

Don’t skip the straining step for a silky smooth syrup. If syrup crystallizes in the fridge, run the jar under warm water or microwave for a few seconds and shake. For a richer syrup, substitute water with apple cider. For a sugar-free version, use monk fruit or allulose sweetener.
