This brown butter apple crisp with oat streusel is a cozy, comforting dessert featuring nutty brown butter, tender spiced apples, and a crunchy oat topping that stays crisp even the next day.

Ingredients

Scale
  • 6 cups apples, peeled and sliced (about 56 medium apples, Honeycrisp or Granny Smith work best)
  • 1/3 cup granulated sugar
  • 2 tablespoons all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg (freshly grated if you have it)
  • 1 tablespoon lemon juice
  • 1/2 cup unsalted butter
  • 3/4 cup old-fashioned rolled oats (not quick oats)
  • 1/2 cup all-purpose flour
  • 1/2 cup packed brown sugar (light or dark both work)
  • 1/4 teaspoon salt
  • 1/2 teaspoon cinnamon

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease your baking dish with butter or nonstick spray.
  2. Make the brown butter: In a medium skillet over medium heat, melt the 1/2 cup unsalted butter. Stir constantly with a wooden spoon. It will foam up, then settle down, and you’ll see little brown specks forming at the bottom. This takes about 5-7 minutes. Once it smells nutty and looks golden brown, remove it from the heat immediately and pour it into a heatproof bowl to stop cooking.
  3. Prepare the apples: Peel and slice the apples into 1/4-inch thick slices. In a large bowl, toss them with the granulated sugar, flour, cinnamon, nutmeg, and lemon juice. Make sure every slice is coated. Let them sit while you make the streusel.
  4. Make the oat streusel: In a medium bowl, combine the rolled oats, flour, brown sugar, salt, and cinnamon. Pour the slightly cooled brown butter over the dry ingredients and stir with a fork until it forms clumps. Don’t overmix—you want some bigger chunks for texture.
  5. Assemble the crisp: Spread the apple mixture evenly in your prepared baking dish. Sprinkle the streusel topping over the apples in an even layer. Don’t press it down.
  6. Bake: Place the dish on a baking sheet to catch any drips. Bake for 40-45 minutes, or until the topping is golden brown and the apple juices are bubbling around the edges. If the topping is browning too fast, tent loosely with foil for the last 10 minutes.
  7. Cool slightly: Let the crisp rest for at least 10 minutes before serving. This helps the juices thicken up.

Notes

Don’t skip browning the butter—it adds a nutty, toasty flavor. Watch the butter carefully as it can burn quickly. Let the crisp rest for 10 minutes before serving to allow juices to thicken. For best results, use old-fashioned rolled oats, not quick oats.
