Instructions

  1. Preheat your oven to 375°F (190°C). Position the rack in the center of the oven. Lightly butter a 9×13-inch baking dish.
  2. Peel, core, and slice 6 medium apples into ¼-inch thick slices.
  3. In a large bowl, combine the sliced apples with ¼ cup granulated sugar, ½ cup packed brown sugar, ¼ cup all-purpose flour, 1½ teaspoons cinnamon, ½ teaspoon nutmeg, ¼ teaspoon salt, 1 tablespoon lemon juice, and 1 teaspoon vanilla extract. Toss gently until every slice is coated. Let it sit for 5 minutes.
  4. Pour ½ cup caramel sauce over the apples and stir gently. Transfer the mixture to the prepared baking dish and spread into an even layer.
  5. In a separate bowl, whisk together 1 cup all-purpose flour, 1 cup rolled oats, ½ cup packed brown sugar, and ½ teaspoon salt. Add ½ cup cold, cubed unsalted butter. Use a pastry cutter or two forks to cut the butter into the dry ingredients until the mixture resembles coarse meal with pea-sized butter pieces.
  6. Sprinkle the oat crumble evenly over the apples. Drizzle an extra 2 tablespoons of caramel sauce over the top in a zigzag pattern.
  7. Place the dish on a baking sheet. Bake for 40-45 minutes, until the topping is golden brown and the filling is bubbly around the edges. If the topping browns too quickly, tent loosely with foil after 30 minutes.
  8. Let the crisp rest for at least 15 minutes before serving.

For a gluten-free version, use a 1:1 gluten-free flour blend. For dairy-free, replace butter with cold coconut oil or plant-based butter and use dairy-free caramel sauce.
