  • 1 medium apple, peeled and finely diced (about 1 cup)
  • 3/4 cup (120g) soft caramel candies, chopped
  • Flaky sea salt, for sprinkling on top

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper or silicone mats.
  2. In a large bowl, beat 1 cup softened butter with 3/4 cup granulated sugar and 3/4 cup light brown sugar until light and fluffy, about 2-3 minutes with an electric mixer.
  3. Beat in 2 large eggs one at a time, then stir in 1 teaspoon vanilla extract.
  4. In a separate bowl, whisk together 1 1/2 cups all-purpose flour, 1 teaspoon baking soda, 1/2 teaspoon salt, and 1/2 teaspoon cinnamon (if using). Slowly add to the wet mixture, mixing just until incorporated.
  5. Gently fold in 3 cups rolled oats, 1 diced apple, and 3/4 cup chopped caramel candies. If apples seem juicy, pat dry before adding.
  6. Scoop heaping tablespoons of dough onto prepared sheets, spacing about 2 inches apart. Flatten cookies slightly with your palm or spatula.
  7. Bake for 12-15 minutes until edges are golden but centers still look a bit soft.
  8. Immediately after removing from oven, sprinkle a pinch of flaky sea salt on each cookie.
