Cozy Crockpot Chicken and Wild Rice Soup: Easy One-Pot Meal

A creamy, comforting soup made with tender chicken, nutty wild rice, and vegetables, all cooked low and slow in a crockpot for a hands-off meal that tastes like a warm hug.

  • 1.5 pounds boneless, skinless chicken breasts (about 23 breasts)
  • 1 cup wild rice blend (uncooked)
  • 1 medium yellow onion, diced
  • 3 medium carrots, peeled and diced
  • 3 stalks celery, diced
  • 4 cloves garlic, minced
  • 6 cups low-sodium chicken broth
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary, crushed
  • 2 bay leaves
  • 1 teaspoon salt (plus more to taste)
  • 1/2 teaspoon black pepper (plus more to taste)
  • 1 cup half-and-half
  • 3 tablespoons all-purpose flour
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat a drizzle of olive oil in a large skillet over medium heat. Add the diced onion, carrots, and celery, and cook for 5-7 minutes until the onions are translucent and the vegetables start to soften. Add the minced garlic and cook for 30 seconds until fragrant. Scrape the mixture into a 6-quart or larger slow cooker.
  2. Add the chicken breasts (whole), wild rice blend, dried thyme, crushed rosemary, bay leaves, 1 teaspoon salt, and 1/2 teaspoon black pepper to the slow cooker. Pour in the chicken broth and stir gently to combine.
  3. Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is tender and the rice is cooked through.
  4. Carefully remove the chicken breasts from the slow cooker and place on a cutting board. Let cool for 2-3 minutes, then shred with two forks. Discard the bay leaves.
  5. Return the shredded chicken to the slow cooker. In a small bowl or mason jar, whisk together the flour with 1/2 cup of hot broth from the slow cooker until smooth. Pour the slurry into the slow cooker and stir well.
  6. Stir in the half-and-half. Let the soup cook on low for another 10-15 minutes until heated through. Do not let it boil.
  7. Taste and adjust seasoning with additional salt and pepper as needed. Ladle into bowls, garnish with fresh parsley, and serve hot with crusty bread or crackers.

Notes

For extra flavor, toast the wild rice in a dry skillet for 2-3 minutes before adding. Add dairy only at the end to prevent curdling. Soup thickens as it sits; add extra broth when reheating. Freeze before adding half-and-half and flour for best results.
