  • 3/4 cup whole milk (or buttermilk)
  • Cinnamon sugar mix for topping: 1/4 cup granulated sugar + 1 teaspoon cinnamon

Instructions

  1. Peel and slice fresh peaches into about 1/2-inch thick pieces. Toss with sugar, lemon juice, vanilla extract, cinnamon, and cornstarch in a large bowl. Let sit for 10-15 minutes to macerate.
  2. Preheat oven to 375°F (190°C).
  3. In a medium bowl, whisk together flour, baking powder, salt, sugar, and cinnamon.
  4. Add cold cubed butter and cut in with a pastry cutter or forks until mixture resembles coarse crumbs with pea-sized butter bits.
  5. Pour in whole milk and stir gently until just combined; dough will be sticky.
  6. Pour peach mixture into a 9×9-inch baking dish, spreading evenly.
  7. Drop spoonfuls of biscuit dough over peaches, leaving some gaps.
  8. Mix granulated sugar and cinnamon and sprinkle generously over biscuit dough.
  9. Bake for 35-40 minutes until biscuit topping is golden brown and a toothpick inserted comes out clean, and peach filling bubbles around edges.
