Cozy Homemade Pumpkin Chai Latte with Cinnamon

A warm, spicy, and perfectly sweet pumpkin chai latte that recreates the magic of a beloved bookshop café. Made with real pumpkin puree and aromatic chai spices, this quick and easy recipe delivers comfort in a mug.

  • 3 tablespoons pumpkin puree (45 g)
  • 2 chai tea bags
  • 2 tablespoons brown sugar (25 g)
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon, plus more for garnish
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 1/8 teaspoon ground cloves (a tiny pinch)
  • Whipped cream (optional, for topping)
  • Cinnamon stick (optional, for garnish)

Instructions

  1. Pour the 2 cups of whole milk into a small saucepan. Set over medium heat and warm until hot but not boiling (about 3-4 minutes).
  2. Whisk in the pumpkin puree, ground cinnamon, ground ginger, nutmeg, and cloves. Whisk continuously for about 1 minute until the mixture turns a warm orange color.
  3. Stir in the brown sugar and vanilla extract. Keep whisking until the sugar is completely dissolved, about 30 seconds.
  4. Drop in the 2 chai tea bags. Reduce heat to low and let steep for 3-4 minutes. Do not steep longer than 5 minutes to avoid bitterness.
  5. Remove the tea bags, pressing them against the side of the pan with a spoon to extract extra flavor. Give the mixture a final whisk.
  6. Optional: Froth the milk using a handheld frother directly in the saucepan for 15-20 seconds, or pour the warm latte into a jar, seal tightly, and shake vigorously for 30 seconds, then pour back into the pan.
  7. Pour the latte into a mug. Top with whipped cream if desired, dust with extra cinnamon, and garnish with a cinnamon stick.

Notes

For best results, use 100% pure pumpkin puree (not pumpkin pie filling). Keep milk at a gentle simmer, not a boil, to avoid bitterness. Toasting spices briefly in the dry pan before adding milk can deepen flavor. Leftovers can be refrigerated for up to 2 days; reheat on the stovetop, not in the microwave.
