  • 1 tablespoon cornstarch
  • 1 package (14 oz / 400g) refrigerated pie crust dough
  • 1 large egg, beaten
  • 1/3 cup (40g) all-purpose flour
  • 1/3 cup (65g) brown sugar, packed
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 3 tablespoons (45g) unsalted butter, cold and cubed

Instructions

  1. Peel, core, and dice 2 cups of tart apples into small, even pieces (about 1/2 inch). Toss with 1 tablespoon lemon juice in a large bowl to prevent browning.
  2. Add 1/4 cup granulated sugar, 1 teaspoon cinnamon, 1/4 teaspoon nutmeg (optional), and 1 tablespoon cornstarch to the apples. Mix well until evenly coated.
  3. Unroll refrigerated pie dough onto a lightly floured surface. Cut out 3-inch circles using a cookie cutter or glass, enough to line 12-14 mini muffin tin cavities. Reserve scraps.
  4. Press each dough round gently into the mini muffin tin cups, covering bottom and sides with slight overhang.
  5. Spoon about 1 to 1.5 teaspoons of apple filling into each dough-lined cup without overfilling.
  6. In a small bowl, combine 1/3 cup flour, 1/3 cup brown sugar, 1 teaspoon cinnamon, and 1/4 teaspoon salt. Add cold cubed butter and mix with a fork or pastry cutter until coarse crumbs form.
  7. Sprinkle cinnamon crumble evenly over each filled cup, pressing lightly to adhere but keeping crumbly texture.
  8. Brush edges of dough around each mini pie with beaten egg for a golden finish.
  9. Bake at 375°F (190°C) on the middle rack for 20-25 minutes until crust is golden and crumble is bubbly and crisp. Tent with foil if crumble browns too fast.
  10. Remove from oven and cool in the tin for 10 minutes before transferring to a wire rack. Serve warm or at room temperature.
