Cozy White Bean Turkey Chili with Easy Cornbread Croutons

  • 1 pound ground turkey (93% lean)
  • 1 medium yellow onion, diced (about 1 cup)
  • 3 cloves garlic, minced
  • 1 jalapeño, seeded and minced

  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • ½ teaspoon salt, plus more to taste
  • ¼ teaspoon black pepper
  • 2 cans (15 ounces each) cannellini beans, drained and rinsed
  • 1 can (4 ounces) diced green chiles
  • 1 can (14.5 ounces) fire-roasted diced tomatoes
  • 3 cups low-sodium chicken broth
  • 1 tablespoon fresh lime juice
  • 2 cups cornbread, cubed (day-old or leftover)
  • 2 tablespoons melted butter
  • ½ teaspoon garlic powder
  • ¼ teaspoon salt
  • Fresh cilantro, chopped (for serving)
  • Shredded cheddar or Monterey Jack cheese (for serving)
  • Sour cream or Greek yogurt (for serving)
  • Lime wedges (for serving)
  • Diced avocado (for serving)

Instructions

  1. Preheat oven to 375°F. Cube cornbread into ½-inch pieces.
  2. Toss cornbread cubes with melted butter, garlic powder, and salt. Spread in a single layer on a baking sheet and bake for 10-12 minutes, stirring halfway, until golden and crispy. Set aside.
  3. Heat olive oil in a large Dutch oven over medium-high heat. Add ground turkey and cook, breaking it up, until deeply browned, about 6-8 minutes.
  4. Add diced onion and cook 3-4 minutes until softened. Add minced garlic and jalapeño, cook 1 minute until fragrant.
  5. Stir in cumin, smoked paprika, oregano, salt, and pepper. Toast spices for 30 seconds.
  6. Add drained beans, diced green chiles, fire-roasted tomatoes, and chicken broth. Stir, scraping up browned bits. Bring to a boil, then reduce heat to low and simmer uncovered for 15-20 minutes.
  7. Stir in fresh lime juice. Adjust seasoning to taste.
  8. Ladle chili into bowls and top with cornbread croutons and desired toppings. Serve immediately.

Notes

For a vegetarian version, skip the turkey and add an extra can of beans or frozen corn. Use vegetable broth. For a creamy version, stir in 4 ounces of cream cheese at the end. Store chili separately from croutons; croutons keep at room temperature for up to 3 days. Chili freezes well for up to 3 months.
