A quick and easy frozen treat made with Greek yogurt, ripe peaches, and honey. Perfect for summer gatherings, this creamy bark is a healthier alternative to ice cream that comes together in minutes.

  • 23 ripe peaches, thinly sliced (about 1/8 inch thick)
  • 3 tablespoons honey, plus extra for drizzling
  • 1/2 teaspoon vanilla extract (optional)

Instructions

  1. Line a baking sheet (9×13 inch or similar) with parchment paper, letting it hang over the edges. Place the pan in the freezer for 5 minutes to chill.
  2. In a medium bowl, combine 2 cups Greek yogurt, 3 tablespoons honey, and 1/2 teaspoon vanilla extract. Stir until smooth.
  3. Pour the yogurt mixture onto the chilled parchment-lined pan. Use a spatula to spread it into an even rectangle, about 1/4 inch thick.
  4. Lay the thinly sliced peaches over the yogurt in a single layer. Press them down gently so they stick.
  5. Drizzle 1-2 tablespoons of extra honey in zigzags over the top.
  6. Place the pan flat in the freezer. Freeze for at least 4 hours, or overnight, until completely solid.
  7. Once frozen, lift the bark off the pan using the parchment handles. Place on a cutting board and break into irregular 2-3 inch pieces. Serve immediately.

Notes

For best results, use full-fat or 2% Greek yogurt to avoid iciness. Let yogurt sit at room temperature for 10 minutes before mixing for easier spreading. Slice peaches thinly and evenly (about 1/8 inch) to prevent icy chunks. The bark can be stored in an airtight container in the freezer for up to 2 weeks. For a vegan version, use dairy-free Greek-style yogurt and maple syrup instead of honey.
