This roasted eggplant is transformed into a silky, rich dish with garlic, herbs, and a nutty tahini drizzle. It’s a simple yet impressive recipe that converts even the biggest eggplant skeptics.

  • 2 medium eggplants (about 1.5 pounds or 680g total)
  • 4 cloves garlic, minced
  • 3 tablespoons olive oil (45ml)
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1/2 teaspoon smoked paprika (optional but recommended)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup tahini (60ml)
  • 2 tablespoons lemon juice (30ml)
  • 2 tablespoons water (30ml)
  • 1 small clove garlic, minced
  • 1/4 teaspoon salt
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon toasted pine nuts or sesame seeds (optional)
  • A pinch of red pepper flakes (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Position a rack in the middle of the oven. Wash and dry the eggplants. Trim off the stem end, but do not peel them.
  2. Slice the eggplant into rounds or half-moons about 3/4 inch (2cm) thick. Aim for uniform thickness.
  3. Salt the eggplant slices: Arrange slices in a single layer on a cutting board or baking sheet. Sprinkle both sides generously with salt—about 1 teaspoon total. Let them sit for 20-30 minutes.
  4. Rinse each slice under cold water to remove excess salt. Pat them thoroughly dry with a clean kitchen towel or paper towels.
  5. In a small bowl, combine the olive oil, minced garlic, oregano, thyme, smoked paprika (if using), 1/2 teaspoon salt, and black pepper. Stir together.
  6. Place the dried eggplant slices in a mixing bowl. Pour the seasoned oil over them and gently toss with your hands until every slice is coated.
  7. Arrange the slices in a single layer on a parchment-lined baking sheet. Do not overcrowd them.
  8. Roast for 25-30 minutes. After 15 minutes, flip each slice with a spatula. Return to the oven and roast for another 10-15 minutes until deeply golden and tender.
  9. While the eggplant roasts, make the tahini drizzle: In a small bowl, whisk together the tahini, lemon juice, water, minced garlic, and 1/4 teaspoon salt. Add more water a teaspoon at a time until it reaches a smooth, pourable consistency. Taste and adjust salt or lemon juice as needed.
  10. Transfer the roasted eggplant to a serving platter. Drizzle the tahini sauce generously over the top. Sprinkle with fresh parsley, toasted pine nuts or sesame seeds, and a pinch of red pepper flakes if desired. Serve warm or at room temperature.

Notes

Do not skip the salting step—it draws out moisture and bitterness, ensuring creamy, flavorful eggplant. For best results, cut uniform slices and give them space on the pan. The tahini drizzle can be made ahead and stored in the refrigerator for up to a week; add a splash of water to thin before using.
