  • 2 tablespoons (8g) fresh parsley, chopped (optional)

Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a boil. Add 8 ounces of rotini or penne pasta and cook according to package directions until al dente (usually 8-10 minutes). Drain and rinse under cold water to stop the cooking process. Set aside to cool completely.
  2. Prepare the Chicken: While the pasta cooks, season the chicken breasts. In a small bowl, mix 1 tablespoon olive oil, 1 teaspoon garlic powder, ½ teaspoon salt, ¼ teaspoon black pepper, and the juice of half a lemon. Rub this mixture all over the chicken breasts.
