  • 2 tablespoons (30 ml) pure maple syrup
  • 1 cup (240 ml) milk of choice (whole milk recommended)
  • 1/4 cup (60g) plain Greek yogurt
  • 1/3 cup (40g) chopped pecans, toasted
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon vanilla extract
  • Pinch of salt
  • Optional toppings: fresh berries, sliced bananas, chia seeds

Instructions

  1. Toast the pecans: Heat a dry skillet over medium heat. Add 1/3 cup (40g) chopped pecans and toast for 3-4 minutes, stirring frequently, until fragrant and lightly browned. Remove from heat and set aside.
  2. Combine oats and maple syrup: In a mixing bowl or mason jar, stir together 1 cup (90g) rolled oats and 2 tablespoons (30 ml) pure maple syrup.
  3. Add milk and yogurt: Pour in 1 cup (240 ml) milk of choice and 1/4 cup (60g) plain Greek yogurt. Stir well to combine.
  4. Season the mixture: Add 1/2 teaspoon cinnamon, 1/2 teaspoon vanilla extract, and a pinch of salt. Stir again.
  5. Mix in pecans: Fold in about half of the toasted pecans, reserving the rest for topping.
  6. Refrigerate: Cover and refrigerate overnight or at least 6 hours.
  7. Serve: Stir the oats in the morning, add a splash of milk if too thick, and top with remaining toasted pecans and optional fruit or seeds.

Notes

Toast pecans carefully to avoid burning. Stir oats and syrup well to prevent clumping. Adjust milk quantity to desired consistency. Soaking time can be extended up to 12 hours for softer oats. Can be made vegan by using plant-based milk and yogurt alternatives.
