  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1/3 cup sun-dried tomatoes, thinly sliced (packed in oil)
  • 3 cups fresh baby spinach, roughly chopped
  • 1 cup heavy cream
  • 1/2 cup freshly grated Parmesan cheese
  • 1/2 cup chicken broth (preferably low sodium)
  • 1 teaspoon Italian seasoning (blend of oregano, basil, thyme)
  • Salt and pepper to taste
  • 1/4 teaspoon red pepper flakes (optional)

Instructions

  1. Pat chicken breasts dry and pound to about 1/2 inch thickness. Season both sides with salt, pepper, and Italian seasoning.
  2. Heat olive oil in a large skillet over medium-high heat until hot but not smoking.
  3. Sear chicken breasts for 4-5 minutes on one side until golden brown, then flip and cook another 4 minutes until cooked through. Remove chicken and tent with foil.
  4. Reduce heat to medium. Add minced garlic to the pan and sauté for 30 seconds until fragrant.
  5. Add sun-dried tomatoes and cook for 1 minute to release flavor.
  6. Pour in chicken broth and heavy cream, scraping up browned bits. Bring to a gentle simmer.
  7. Stir in Parmesan cheese until melted and smooth. Add spinach and cook until wilted, about 2 minutes. Season with salt, pepper, and optional red pepper flakes.
  8. Return chicken to the pan, spoon sauce over, and cook together for 2-3 minutes to warm through and marry flavors.
  9. Serve hot, topped with sauce. Pairs well with garlic mashed potatoes or crusty bread.

Notes

If sauce thickens too much, add a splash of chicken broth or cream to loosen. Avoid burning garlic to prevent bitterness. Freshly grate Parmesan for best melting and flavor. Wilt spinach last to keep bright color and fresh taste. For dairy-free, substitute heavy cream with coconut cream and Parmesan with nutritional yeast. Chicken thighs can be used with adjusted cooking times.
