  • 1 medium very ripe banana (about 100g mashed)
  • 2 tablespoons (32g) creamy peanut butter
  • ⅔ cup (160ml) milk of choice (whole milk recommended)
  • 1 tablespoon (15ml) maple syrup or honey (optional)
  • 1 tablespoon (12g) chia seeds (optional but recommended)
  • ½ teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Mash the banana: In your jar or a small bowl, mash the ripe banana with a fork until it’s a smooth, almost liquid paste.
  2. Add the wet ingredients: To the mashed banana, add the peanut butter, milk, maple syrup (if using), and vanilla extract. Stir until the peanut butter is fully incorporated.
  3. Add the dry ingredients: Pour in the rolled oats, chia seeds (if using), and a pinch of salt. Stir well until everything is evenly combined.
  4. Seal and shake: Put the lid on your jar tightly and shake for about 10 seconds to ensure everything is mixed.
  5. Refrigerate overnight: Place the jar in the refrigerator for at least 6 hours, but overnight (8-12 hours) is best.
  6. Serve cold or warm: In the morning, stir the oats. If too thick, add a splash of milk. Eat cold or microwave for 45-60 seconds for a warm breakfast.
  7. Add toppings: Top with sliced banana, extra peanut butter, granola, dark chocolate chips, or a dusting of cinnamon.

Notes

For best results, use very ripe bananas with brown spots for natural sweetness. Mash the banana fully into the mixture rather than slicing it on top. The oats taste even better on day 2 or 3 as flavors meld. If the oats are too watery, reduce milk by 2 tablespoons next time. If too thick, add a splash of milk before serving. Store in the refrigerator for up to 5 days. Do not freeze.
