  • 1 cup (90g) rolled oats
  • 1 cup (240ml) milk (dairy, almond, oat, or coconut)
  • 2 tablespoons (32g) creamy peanut butter
  • 1 medium ripe banana, mashed (about 100g)
  • 1 tablespoon (15ml) honey or maple syrup (optional)
  • 1 tablespoon (12g) chia seeds
  • 1/2 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. In a mason jar or airtight container, mash the ripe banana with a fork until mostly smooth.
  2. Add the milk, peanut butter, honey or maple syrup, and vanilla extract. Whisk or stir until the peanut butter is mostly incorporated.
  3. Add the rolled oats, chia seeds, and a pinch of salt. Stir thoroughly until all ingredients are well combined.
  4. Seal the jar tightly and refrigerate for at least 6 hours, preferably overnight (8-12 hours).
  5. In the morning, stir the oats well. If too thick, add a splash of milk and stir again.
  6. Top with sliced banana, a drizzle of peanut butter, granola, or chocolate chips. Serve cold or let sit at room temperature for 10 minutes.

Notes

For best texture, use rolled oats (not instant or steel-cut). Chia seeds are key for creaminess. Stir halfway through soaking if possible. Oats keep in the fridge for up to 4 days. To reheat, microwave for 45-60 seconds (remove metal lid).
