  • 2 cups (180g) rolled oats
  • 1 cup (245g) pumpkin puree (100% pure, not pumpkin pie filling)
  • 3 cups (710ml) milk (whole, 2%, or dairy-free alternative)
  • 1/4 cup (60ml) pure maple syrup
  • 2 teaspoons pumpkin pie spice (or 1 tsp cinnamon, 1/2 tsp ginger, 1/4 tsp nutmeg, 1/4 tsp cloves)
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon fine sea salt
  • 2 tablespoons chia seeds (optional)
  • 1 tablespoon unsalted butter (optional, or coconut oil for vegan)
  • For serving (optional): extra maple syrup, chopped pecans or walnuts, Greek yogurt or whipped cream, cinnamon

Instructions

  1. Lightly grease the inside of a 4 to 6-quart slow cooker with butter or non-stick spray.
  2. In a medium mixing bowl, whisk together pumpkin puree, milk, maple syrup, and vanilla extract until smooth. If using chia seeds, whisk them in now.
  3. Add rolled oats, pumpkin pie spice, and salt to the slow cooker. Stir to combine. Pour the wet mixture over the top and stir until everything is evenly distributed.
  4. Cover and cook on LOW for 6-8 hours. Do not cook on high.
  5. In the morning, stir the oatmeal. If too thick, add a splash of warm milk or water. Adjust sweetness to taste.
  6. If using butter, stir it in while the oatmeal is hot.
  7. Ladle into bowls and top with desired toppings. Serve warm.

Notes

Use rolled oats, not quick or steel-cut. For dairy-free milk, add 1 tablespoon cornstarch to prevent curdling. Stir once after 1 hour of cooking, then leave lid on. Leftovers keep in fridge for up to 5 days or freezer for 3 months.
