Creamy Slow Cooker White Chicken Chili

An incredibly easy and delicious white chicken chili made in the slow cooker with tender chicken, white beans, and a luscious creamy broth. Perfect for busy weeknights or cozy weekends.

  • 1.5 lbs boneless, skinless chicken breasts (or thighs)
  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced
  • 2 (4-oz) cans diced green chiles
  • 1 (15-oz) can cannellini beans, drained and rinsed
  • 1 (15-oz) can great northern beans, drained and rinsed
  • 4 cups low-sodium chicken broth
  • 4 oz cream cheese, softened and cubed
  • 1/2 cup heavy cream
  • 1 tbsp olive oil
  • 1 tsp ground cumin
  • 1 tsp dried oregano
  • 1/2 tsp chili powder
  • 1/4 tsp cayenne pepper (optional)
  • Salt and freshly ground black pepper, to taste
  • Fresh cilantro, chopped (for garnish)
  • Fresh lime juice and lime wedges (for garnish)
  • Shredded Monterey Jack or pepper jack cheese (for garnish)
  • Diced avocado (for garnish)
  • Tortilla chips or strips (for garnish)

Instructions

  1. In a large skillet, heat olive oil over medium heat. Add diced onion and cook until softened and translucent, about 5-7 minutes. Add minced garlic and cook for another minute until fragrant.
  2. Transfer cooked onion and garlic to a 6-quart or larger slow cooker. Add drained and rinsed white beans, diced green chiles (with juices), ground cumin, dried oregano, chili powder, cayenne (if using), and a generous pinch of salt and pepper. Stir to combine.
  3. Nestle chicken breasts into the bean mixture. Pour chicken broth over everything, ensuring chicken is mostly submerged.
  4. Cover and cook on LOW for 4-6 hours or on HIGH for 2-3 hours, until chicken is cooked through and shreds easily.
  5. Carefully remove chicken from slow cooker and shred using two forks or a hand mixer. Return shredded chicken to slow cooker.
  6. Add cubed cream cheese and stir until mostly melted. Pour in heavy cream and stir until well combined and chili is creamy. Taste and adjust seasoning with salt, pepper, or lime juice.
  7. Ladle chili into bowls and garnish with cilantro, cheese, avocado, lime juice, and tortilla chips. Serve hot.

Notes

For best results, use full-fat cream cheese softened to room temperature. If dairy-free, substitute cream cheese with dairy-free version and heavy cream with full-fat coconut milk. To thicken chili, mash some beans against the side of the slow cooker before adding cream cheese.
