  • 1 teaspoon dried Italian herbs (oregano, basil, thyme mix)

  • ½ cup plain Greek yogurt (or dairy-free coconut yogurt)
  • 2 tablespoons hot sauce
  • 1 tablespoon honey
  • Fresh lemon juice (a splash)

Instructions

  1. Pat dry chicken pieces with paper towels to remove moisture.
  2. In one bowl, whisk together flour, smoked paprika, garlic powder, onion powder, salt, and pepper.
  3. In another bowl, beat the eggs.
  4. Dip each chicken piece into the egg wash, then dredge in the seasoned flour mixture, pressing lightly to adhere.
  5. Place coated pieces on a tray and let rest for 10 minutes to help the coating set.
  6. Toss chopped vegetables in olive oil, Italian herbs, salt, and pepper. Spread evenly on a baking sheet.
  7. Roast vegetables in a preheated oven at 400°F for 20-25 minutes, stirring halfway through until tender and slightly caramelized.
  8. Preheat air fryer to 400°F.
  9. Place chicken pieces in a single layer in the air fryer basket, lightly spray with cooking oil.
  10. Cook chicken for 10-12 minutes, flipping halfway through, until golden brown and cooked through (internal temperature 165°F). Cook in batches if necessary.
  11. While chicken cooks, mix Greek yogurt, hot sauce, honey, and a splash of lemon juice in a small bowl. Adjust seasoning to taste.
