  • 2 tablespoons (28 grams) unsalted butter, cut into small pieces
  • 2 tablespoons (25 grams) granulated sugar
  • 1/4 teaspoon salt
  • 1 cup (125 grams) all-purpose flour
  • 2 large eggs, room temperature
  • Vegetable oil spray
  • Cinnamon sugar coating:
  • 1/2 cup (100 grams) granulated sugar
  • 1 tablespoon ground cinnamon

Instructions

  1. In a medium saucepan, combine 1 cup water, 2 tablespoons unsalted butter, 2 tablespoons granulated sugar, and 1/4 teaspoon salt. Bring to a rolling boil over medium-high heat, stirring occasionally.
  2. Remove from heat and quickly stir in 1 cup all-purpose flour until the mixture forms a ball and pulls away from the sides of the pan. Return to low heat for about 1 minute, stirring constantly to dry the dough slightly.
  3. Transfer the dough to a mixing bowl and let it cool for about 2 minutes so the eggs won’t scramble when added.
  4. Beat in 2 large eggs one at a time, mixing thoroughly after each addition until the dough is smooth and glossy with a pipeable consistency.
  5. Transfer dough to a piping bag fitted with a large star tip. Pipe 4-5 inch strips onto a parchment-lined tray or plate.
  6. Preheat air fryer to 375°F (190°C) and lightly spray the basket with vegetable oil spray to prevent sticking.
  7. Place churros in the basket without overcrowding. Cook for 7-8 minutes until golden and crispy, flipping halfway through for even browning.
  8. Toss hot churros in the cinnamon sugar mixture until well coated. Serve immediately for best texture.

For dairy-free, substitute butter with coconut oil. Use gluten-free flour blend for gluten-free option. Lightly spray air fryer basket to prevent sticking.
