Master the art of crispy textures in the air fryer with this easy, quick, and versatile method that delivers perfectly crisp meals every time without the guilt or mess.

Ingredients

  • Potatoes, peeled and cut into fries or wedges (Yukon Gold or Russet recommended)
  • Chicken wings or tenders, skin-on (optional)
  • Vegetables like cauliflower florets or Brussels sprouts, trimmed and halved
  • Avocado oil or light olive oil spray
  • Butter, melted (optional)
  • Sea salt or kosher salt (Maldon flakes recommended for finishing)
  • Freshly ground black pepper
  • Garlic powder
  • Smoked paprika
  • Onion powder
  • Dried herbs like thyme or oregano
  • Cornstarch or arrowroot powder
  • Parmesan cheese, finely grated (optional)
  • Fresh parsley or chives, chopped (optional)
  • Lemon wedges (optional)

Instructions

  1. Prep the Ingredients (10-15 minutes): Cut potatoes, trim veggies, or pat protein dry with paper towels. Soak potatoes in cold water for at least 10-30 minutes if possible, then dry thoroughly.
  2. Season and Coat (5-7 minutes): Toss ingredients in a large bowl with a light spray or drizzle of avocado oil. Sprinkle about 1 tablespoon cornstarch per pound of potatoes or veggies, add salt, pepper, and spices, then toss until evenly coated.
  3. Preheat the Air Fryer (3 minutes): Preheat to 400°F (200°C) to start crisping immediately.
  4. Arrange and Cook (15-25 minutes): Place ingredients in a single layer in the basket. Cook at 400°F, shaking or flipping every 5-7 minutes. Fries take 20-25 minutes, chicken wings 18-20 minutes, veggies about 15 minutes.
  5. Check for Doneness and Rest (2-3 minutes): Look for deep golden color and crispy edges. Add a few minutes if needed, then let rest for 1-2 minutes to set crispiness.
  6. Garnish and Serve: Sprinkle fresh herbs or squeeze lemon juice before serving. Serve hot.

Notes

Pat ingredients dry to remove moisture before cooking. Do not overcrowd the air fryer basket to avoid sogginess. Shake or flip food every 5-7 minutes for even browning. Use a light oil spray for best crispiness. Preheat the air fryer for optimal texture. Adjust cooking times based on your air fryer model and ingredient thickness. For gluten-free, substitute cornstarch with arrowroot or potato starch. For dairy-free, omit butter or use plant-based alternatives. Reheat leftovers in the air fryer at 350°F for 3-5 minutes to restore crispiness.
