Ingredients

Scale
  • 1.5 pounds chicken tenders (or boneless skinless chicken breasts, cut into strips)
  • 1/2 cup all-purpose flour
  • 2 large eggs, room temperature
  • 1 cup panko breadcrumbs
  • 1/2 cup plain breadcrumbs
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Olive oil spray
  • 1/4 cup honey
  • 3 tablespoons Dijon mustard
  • 1 tablespoon yellow mustard
  • 1 tablespoon mayonnaise
  • 1 teaspoon apple cider vinegar

Instructions

  1. Set up three shallow bowls: first with flour, second with whisked eggs, third with panko, plain breadcrumbs, garlic powder, onion powder, paprika, salt, and pepper mixed together.
  2. Pat chicken tenders dry with paper towels.
  3. Dredge each tender in flour, shaking off excess. Dip in egg wash, letting excess drip off. Press into breadcrumb mixture, coating all sides.
  4. Place coated tenders on a plate or baking sheet in a single layer. Refrigerate for 15 minutes if time allows.
  5. Preheat air fryer to 400°F for 3-5 minutes.
  6. Arrange tenders in a single layer in the air fryer basket, not overcrowding. Spray tops generously with olive oil spray.
  7. Air fry at 400°F for 6 minutes. Flip tenders, spray other side with oil, and cook for another 4-6 minutes until internal temperature reaches 165°F and coating is golden brown.
  8. While chicken cooks, whisk together honey, Dijon mustard, yellow mustard, mayonnaise, and apple cider vinegar in a small bowl. Adjust to taste.
  9. Transfer cooked tenders to a plate. Brush or drizzle honey mustard glaze over hot tenders. Serve immediately with extra glaze on the side.

Notes

For best results, pat chicken dry before coating. Don’t skip the flour step—it helps the breading stick. Let breaded tenders rest in the fridge for 15 minutes to set coating. Spray generously with oil for maximum crispiness. Flip halfway through cooking. Use a meat thermometer to ensure internal temperature reaches 165°F. For reheating, use air fryer at 375°F for 3-4 minutes; avoid microwave.
