These crispy air fryer zucchini fries are a quick, crunchy, and slightly healthy snack ready in just 15 minutes. They feature a golden, cheesy coating with a hint of garlic and smoked paprika for a flavorful bite.

  • 2 medium zucchinis, sliced into fries about 1012 inches long and ½ inch thick
  • ½ cup panko breadcrumbs
  • ¼ cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • ½ teaspoon smoked paprika (optional)
  • 1 large egg, beaten (room temperature)
  • Salt and freshly ground black pepper, to taste
  • Cooking spray or olive oil mist

Instructions

  1. Wash and dry the zucchinis thoroughly. Slice each one lengthwise into fries about ½ inch thick. Pat dry again with paper towels to remove excess moisture.
  2. In one bowl, beat the large egg with a pinch of salt and pepper. In another bowl, combine the panko breadcrumbs, grated Parmesan, garlic powder, smoked paprika, and a little salt and pepper. Mix well.
  3. Dip each zucchini fry first into the egg mixture, letting any excess drip off, then press it into the breadcrumb mixture until well coated. Place the breaded fries on a baking sheet or plate. For extra crunch, double-dip by repeating the egg and breadcrumb steps.
  4. Preheat the air fryer to 400°F (200°C) for 3 minutes.
  5. Spray the air fryer basket lightly with cooking spray or brush with olive oil. Arrange the zucchini fries in a single layer without overlapping.
  6. Air fry for 7 minutes at 400°F (200°C), then carefully flip each fry using tongs or a fork, spritz again with a bit of oil, and cook for another 7-8 minutes until golden and crispy.
  7. Serve immediately with your favorite dipping sauce.

Notes

Pat zucchini dry to remove excess moisture for crispiness. Avoid overcrowding the air fryer basket to prevent soggy fries. Double-dip the fries in egg and breadcrumbs for extra crunch. If no air fryer is available, bake on a wire rack at 425°F for 20-25 minutes, flipping halfway. Store leftovers in an airtight container in the fridge for up to 2 days and re-crisp in the air fryer.
