These crispy bacon wrapped jalapeño poppers are a quick, easy, and crowd-pleasing appetizer featuring smoky bacon, spicy jalapeños, and creamy cheese filling, served with a simple ranch dip.

  • 8 oz (225 g) cream cheese, softened
  • 1 cup (100 g) shredded sharp cheddar cheese
  • 12 strips thick-cut bacon
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt to taste
  • Black pepper to taste
  • 1/2 cup (120 ml) sour cream
  • 1 tbsp ranch seasoning mix
  • Fresh chives or parsley, chopped (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper and set a cooling rack on top if available.
  2. Slice each jalapeño in half lengthwise. Remove seeds and membranes carefully for less heat. Rinse and pat dry.
  3. In a mixing bowl, combine softened cream cheese, shredded cheddar, garlic powder, onion powder, salt, and pepper. Mix until smooth.
  4. Stuff each jalapeño half generously with the cheese mixture.
  5. Wrap each stuffed jalapeño half with one strip of bacon, securing with a toothpick if needed.
  6. Place the bacon-wrapped jalapeños on the cooling rack over the baking sheet, spacing evenly.
  7. Bake for 20-25 minutes, turning once halfway through, until bacon is golden and cheese is bubbly.
  8. While baking, mix sour cream and ranch seasoning in a small bowl. Stir in chopped chives or parsley if desired. Chill until serving.
  9. Let the poppers cool for a few minutes before serving with the ranch dip.

Notes

Use thick-cut bacon for best crispiness and to hold poppers together. Remove seeds and membranes from jalapeños to reduce heat. You can prep filling and stuff jalapeños a day ahead, then wrap with bacon and bake fresh. Flip poppers halfway through baking if no cooling rack is available. Let poppers cool slightly before serving to set filling and reduce mess.
