Instructions

  1. Preheat your oven to 450°F (230°C). Line a large baking sheet with parchment paper and set aside.
  2. Wash the cauliflower and cut it into bite-sized florets (1-2 inches wide). Pat them dry with a clean kitchen towel.
  3. In a medium bowl, whisk together flour, milk, garlic powder, onion powder, smoked paprika, salt, black pepper, and baking powder until smooth.
  4. Add the cauliflower florets to the batter and toss gently until each piece is completely coated. Let excess batter drip off, then place each floret on the prepared baking sheet in a single layer with space between them.
  5. Bake for 20 minutes, then flip each floret over with a spatula. Bake for another 5-10 minutes until golden brown and crispy on the edges (total 25-30 minutes).
  6. While the cauliflower bakes, make the sauce: In a small bowl, whisk together hot sauce, melted butter, honey or maple syrup, and Worcestershire sauce (if using).
  7. Remove the baked cauliflower from the oven. Transfer to a large bowl, pour the buffalo sauce over them, and gently toss until every piece is coated. Return to the baking sheet in a single layer.
  8. Bake for another 5-7 minutes to set the sauce and get them extra crispy.
  9. Remove from the oven and let cool for 2-3 minutes. Transfer to a serving platter, garnish with fresh parsley or green onions, and serve with ranch or blue cheese dressing on the side.
