  • ½ cup (60 g) all-purpose flour (or gluten-free flour)
  • ¾ cup (75 g) panko breadcrumbs (Japanese-style)
  • ¼ cup (25 g) grated Parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp paprika
  • ¾ tsp salt
  • ½ tsp freshly ground black pepper
  • 2 large eggs, beaten
  • Olive oil spray

Instructions

  1. In a shallow bowl, combine flour, panko breadcrumbs, grated Parmesan, garlic powder, paprika, salt, and black pepper. Stir well to mix evenly.
  2. In another bowl, beat the eggs until smooth and slightly frothy.
  3. Pat dry the fish fillets with paper towels to remove excess moisture.
  4. Dip each fillet into the egg wash, allowing excess to drip off, then press into the coating mixture on both sides. Place coated fillets on a plate or baking sheet.
  5. Preheat the air fryer to 400°F (200°C) for 3 minutes.
  6. Lightly spray the air fryer basket with olive oil spray to prevent sticking.
  7. Place the coated fish fillets in a single layer in the basket, ensuring they do not overlap. Spray the top of the fillets lightly with olive oil spray.
  8. Air fry at 400°F (200°C) for 8 minutes. Carefully flip each fillet using tongs or a spatula, spray the other side lightly with oil, and cook for another 8 minutes. For thicker fillets, add 2 more minutes per side.
  9. Check that the fish reaches an internal temperature of 145°F (63°C) and flakes easily with a fork.
  10. Transfer the fish to a warm plate and serve immediately.

Notes

Pat fish dry before coating to avoid soggy crust. Do not overcrowd the air fryer basket. Spray fish lightly with olive oil spray before cooking for extra crispiness. Adjust cooking time for thicker fillets. Leftover coating mix can be saved for chicken or veggies. For dairy-free, substitute Parmesan with nutritional yeast or omit.
