  • 8 ounces cream cheese, softened
  • 1 can (14 ounces) artichoke hearts, drained and roughly chopped
  • 1 cup shredded mozzarella cheese

  • 2 cloves garlic, minced
  • Zest of 1 lemon
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper, freshly ground
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 can (16.3 ounces, 8 count) canned biscuit dough (Pillsbury Grands! Homestyle)
  • 3 tablespoons unsalted butter, melted
  • 1/2 teaspoon garlic powder
  • 1 teaspoon dried parsley
  • Flaky sea salt for finishing (optional)

Instructions

  1. Preheat your oven to 375°F (190°C). Line a rimmed baking sheet with parchment paper.
  2. Wilt the spinach: Heat a skillet over medium heat. Add the fresh spinach with just the water clinging to it from rinsing. Toss for 2 to 3 minutes until wilted. Transfer to a clean kitchen towel or paper towels and let cool.
  3. Squeeze the spinach dry: Wrap the spinach in the towel and twist tightly over the sink to remove all moisture. Then chop the squeezed spinach finely.
  4. Make the filling: In a medium bowl, combine the softened cream cheese, chopped spinach, chopped artichoke hearts, shredded mozzarella, grated Parmesan, minced garlic, lemon zest, salt, pepper, and red pepper flakes (if using). Stir until evenly mixed.
  5. Prepare the biscuit dough: Open the can of biscuits. Separate them and flatten each into a 4-inch circle about 1/4 inch thick.
  6. Fill and seal: Place about 1 heaping tablespoon of filling in the center of each dough circle. Pull the edges up around the filling and pinch firmly to seal. Roll gently between your palms to form a smooth ball. Place seam-side down on the prepared baking sheet, spacing 2 inches apart.
  7. Make the topping: In a small bowl, mix the melted butter with garlic powder and dried parsley. Brush this mixture generously over each bread bite. Sprinkle with flaky sea salt if desired.
  8. Bake: Place the baking sheet in the preheated oven and bake for 12 to 15 minutes, until deep golden brown and filling is bubbling slightly. Rotate the pan halfway through.
  9. Cool slightly before serving: Let rest on the baking sheet for 5 minutes, then transfer to a serving platter.

Notes

Dry ingredients are non-negotiable: squeeze spinach and pat artichokes dry to avoid soggy bites. Don’t overfill; a heaping tablespoon per biscuit is plenty. Seal dough edges firmly to prevent leaks. Use room temperature cream cheese for smooth filling. Watch the oven closely; start checking at 10 minutes.
