  • 3/4 cup granulated sugar
  • 3 large eggs, room temperature

  • 1/4 cup salted caramel sauce (homemade or store-bought)
  • Pinch of sea salt flakes
  • 1 tsp vanilla extract
  • Optional: 1/2 tsp espresso powder
  • Optional: powdered sugar for dusting

Instructions

  1. Preheat your oven to 425°F (220°C). Grease your ramekins generously with butter and dust lightly with flour or cocoa powder to prevent sticking.
  2. Melt the chocolate and butter together using a double boiler or microwave in 30-second bursts, stirring until smooth and glossy. Set aside to cool slightly.
  3. In a separate bowl, whisk the eggs and sugar vigorously until pale and thick, about 3 to 5 minutes by hand or 2 minutes with an electric mixer.
  4. Slowly pour the melted chocolate mixture into the eggs while whisking constantly to avoid scrambling.
  5. Gently fold in the flour and vanilla extract using a spatula until no flour streaks remain.
  6. Fill each ramekin halfway with the batter. Spoon about 1 tablespoon of salted caramel sauce into the center, then cover with the remaining batter.
  7. Place ramekins on a baking sheet and bake for 12–14 minutes until edges are firm but the center jiggles slightly.
  8. Let the cakes cool for 2 minutes. Run a knife around the edges, then invert carefully onto serving plates. Dust with powdered sugar and sprinkle a pinch of sea salt flakes on top.
